Ima Blueberry Muffins

2019 Ima Blueberry’s Muffin Contest at the Oregon State Fair

Ingredients

  • 1 ½ c. all-purpose flour

  • ¾ c. white sugar

  • ½ tsp. salt

  • 2 tsp. baking powder

  • ½ tsp. cinnamon or pumpkin pie spice

  • 1/3 c. vegetable oil

  • 2 eggs

  • 1/3 c. milk

  • 1 c. fresh Oregon Blueberries

     

  • Crumb Topping:

  • ½ c. white sugar

  • 1/3 c. all-purpose flour

  • ¼ c. butter, cubed

Instructions

  • Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with muffin liners.

  • Combine 1 1/2 cups flour, 3/4 cup sugar, salt, baking powder and cinnamon. In a separate bowl, combine wet ingredients.  Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.

  • To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, and 1/4 cup butter.  Mix with fork, and sprinkle over muffins before baking.

  • Bake for 20 to 25 minutes in the preheated oven, or until done (Phil says 23 minutes does the trick).

  • Once cooled, top each muffin with a dollop of whipped cream and a blueberry.
