Oregon Blueberry Lime Freezer Pops
Blueberry Lime Freeze Pops are a refreshing, tart, and sweet summer treat.
Ingredients
- 6 1/4 cups fresh Oregon blueberries
- 1/2 cup + 2 T. sugar
- 1/2 cup + 2 T. water
- 2 1/2 limes - juice and zest from bot
Instructions
- In a small saucepan combine sugar and water over medium heat, stir until the sugar dissolves completely to create a simple syrup, then remove from heat and let cool.
- Add the blueberries in a blender or food processor and blend until the blueberries are completely blended then press through a strainer to remove seeds and skins.
- To the blueberry mixture, add cooled simple syrup and the juice and zest from 2 limes.
- Transfer the mixture to a popsicle mold and freeze for at least 4 hours or overnight until firm. Enjoy!
