Sausage, Blueberry and Goat Cheese Flatbread
Blueberries are just as delicious in savory recipes like this delightful Sausage, Blueberry and Goat Cheese Flatbread. This is a simple recipe that can be grilled outdoors or baked in the oven. For a kid-friendly version, the goat cheese can be substituted with shredded Mozzarella.
Ingredients

4 prepared flatbread

1-2 tablespoons extra virgin olive oil

1/4-1/3 cup prepared basil pesto

4-6 ounces goat cheese, crumbled (1-1½ cups shredded mozzarella can be substituted)

1-pound ground Italian sausage, cooked

1-pint blueberries, halved (so they don’t roll off the flatbread)

½ bunch fresh basil leaves, torn
Instructions

Pre-heat the grill to 400F.

Brush the flatbread with olive oil.

Spread about 2-3 teaspoons of basil pesto on one side of each flatbread. Then top the flat bread with goat cheese (or mozzarella) then layer on the crumbled sausage and blueberries.

Place the flat bread on the pre-heated grill over medium heat. Cover and let the flatbread cook until the edges are golden, and the cheese is melted.

Transfer the flat bread to a cutting board and sprinkle with fresh basil. Let them cool for a few minutes before cutting and serving.
