Oregon Blueberry and Apple Coleslaw
This sweet-and-tangy Blueberry and Apple Coleslaw is a refreshing twist on a classic BBQ side.
Ingredients
- 3 1/2 cups fresh Oregon blueberries (18 oz package)
- 4 cups cabbage, shredded
- 1.5 cups carrots, grated
- 1/2 large apple, sliced into matchstick sized pieces
- 1 cup mayonnaise
- 3 Tbs. apple cider vinegar
- 2 Tbs. sugar
- 3/4 tsp. salt
- Pepper to taste
Instructions
- In a large bowl, combine the shredded cabbage, grated carrots, and apples.
- In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, and salt until combined. Add pepper to taste.
- Pour the dressing over the cabbage mixture and toss until fully coated.
- Add fresh Oregon blueberries and gently mix into your coleslaw.
- Cover and let chill in the refrigerator for at least 30 minutes.
- Serve alongside sandwiches, tacos, or at BBQs and potlucks. Enjoy!
