Oregon Blueberry and Apple Coleslaw

This sweet-and-tangy Blueberry and Apple Coleslaw is a refreshing twist on a classic BBQ side.

     

 

Ingredients

      • 3 1/2 cups fresh Oregon blueberries (18 oz package) 
      • 4 cups cabbage, shredded 
      • 1.5 cups carrots, grated 
      • 1/2 large apple, sliced into matchstick sized pieces
      • 1 cup mayonnaise 
      • 3 Tbs. apple cider vinegar 
      • 2 Tbs. sugar 
      • 3/4 tsp. salt 
      • Pepper to taste 

Instructions

  • In a large bowl, combine the shredded cabbage, grated carrots, and apples.
  • In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, and salt until combined. Add pepper to taste. 
  • Pour the dressing over the cabbage mixture and toss until fully coated.
  • Add fresh Oregon blueberries and gently mix into your coleslaw. 
  • Cover and let chill in the refrigerator for at least 30 minutes.
  • Serve alongside sandwiches, tacos, or at BBQs and potlucks. Enjoy!
