Looking for an easy yet stunning appetizer? Try this luscious whipped feta with balsamic Oregon blueberries, honey and lemon.
Ingredients
- For the Balsamic Blueberries
- 3 c. frozen Oregon blueberries
- 1 T. balsamic vinegar
- 1/4 c. honey
- 1 T. fresh squeezed lemon juice
- For the Whipped Feta
- 8 oz. feta, crumbled
- 4 oz. cream cheese
- 2 T. olive oil
- Fresh basil or mint (for garnish)
- Balsamic glaze (optional)
Directions
- For the Balsamic Blueberries
- In a saucepan over medium heat, add frozen blueberries and bring them to a simmer. Continue to simmer for 13-15 minutes, until most of the juice has evaporated and the blueberries are thick enough to coat the back of a spoon. Remove from heat.
- Add balsamic vinegar, lemon juice, and honey and gently stir until combined.
- For the Whipped Feta
- In a food processor, combine the crumbled feta, cream cheese, and olive oil.
- Process until smooth and creamy, scraping down the sides as needed.
To Assemble:
- Spread the whipped feta onto a serving plate or in a bowl, creating a swirl with the back of a spoon.
- Spoon the Balsamic Oregon Blueberries over the whipped feta, drizzle with additional balsamic glaze (optional) and top with fresh basil or mint.
- Serve with crackers, toast, or pita bread and enjoy!
