Oregon Blueberry Wellness Shot

An immune-boosting drink that's sweet and delicious. A perfect start to your day!

Ingredients

  • 1 cup frozen blueberries
  • 1/2 tsp. peeled and grated ginger 
  • 1 T. honey 
  • 1 cup coconut water 
  • 1 fresh mandarin orange, peeled 

Directions

  • Blend all ingredients in a high-powered blender, on high, for about 30 seconds. Strain the mixture through a fine-mesh strainer into a bowl or measuring cup, using a spatula to push the juice through the strainer until only pulp remains. Discard the pulp.
  • Serve juice in shot glasses or freeze the juice in an ice cube tray or ice cube mold and serve in a glass with sparkling water. 
  • Makes 6 wellness shots
