The Blueberry Cucumber Refresher is the lightest, most refreshing new way to cool down when temperatures rise. Whether you’re rehydrating after a workout or just generally trying to beat the heat, you’ll love this sweet, tangy combo of blueberries, mint, cucumber, lime, ginger and honey.
Ingredients
- ⅔ cup cold water
- 3 tablespoons fresh lime juice
- 1 tablespoon honey
- 1⁄2 cup fresh or frozen blueberries
- 1⁄2 cup cucumber, roughly chopped , plus 1 thinly cut lengthwise piece for garnish
- 2 teaspoons of fresh ginger, peeled (about a 1⁄2-inch piece)
- 3 mint leaves
- 3 ounces club soda to top, chilled

Add water, lime juice, honey, blueberries, cucumber, ginger, and mint leaves to a blender.

Blend on high speed until completely combined.

Strain the mixture through a fine metal sieve into a glass filled with ice. Top with club soda.

Garnish the refresher by threading the lengthwise cucumber slice onto a cocktail skewer to create a wavy pattern, then add blueberries on the end of the skewer to hold the cucumber in place.
- If you prefer a sweeter drink, add more honey to taste.
