Oregon Blueberry Cheesecake Overnight Oats

Quick, easy, and the perfect make-ahead breakfast for blueberry lovers.

Ingredients

  • 2 cups fresh Oregon blueberries, plus more for topping 
  • 1 cup old fashioned oats
  • 1 cup milk
  • 1/2 cup full fat Greek yogurt 
  • 4 oz. cream cheese, softened 
  • 2 T. maple syrup 
  • 1 tsp. vanilla extract 
  • Granola or graham crackers for topping 

Directions

  • In a medium bowl, mix the softened cream cheese, Greek yogurt, maple syrup, and vanilla extract until completely smooth. Add milk and thoroughly combine into the mixture. 
  • Stir in the old-fashioned oats until evenly combined.
  • Fold in the fresh Oregon blueberries. 
  • Divide the mixture between jars or containers and cover tightly.
  • Refrigerate for at least 4 hours, or overnight, until thick and creamy.
  • Stir before serving and add a splash of milk for a looser consistency.
  • Top with extra fresh Oregon blueberries and granola or graham cracker crumbs before serving. Enjoy!
