These Chicken Blueberry Lettuce Wraps make a deliciously light – yet satisfying – meal or snack!
Ingredients
- 2 lettuce leaves, washed and dried
- 3 ½ ounces cooked chicken breast, cubed
- 1⁄4 cup blueberries
- 1 ounce feta cheese, crumbled
- 1⁄2 ounce pecans, crushed
- 1⁄2 tablespoon balsamic glaze
- 1⁄8 teaspoon pepper
- 1⁄8 teaspoon salt
Directions

Arrange lettuce leaves on a serving platter and top with the chicken and blueberries, dividing evenly between the lettuce leaves.

Top with feta cheese and pecans; drizzle with balsamic glaze, and salt and pepper to taste.
- Use your favorite lettuce of choice, including butterhead (or Bibb), romaine lettuce, little gem lettuce, iceberg, or green leaf lettuce.
- Substitute pecans for almonds or walnuts if desired.
- Substitute feta cheese for goat cheese if desired.
