Oregon Blueberry Cheesecake Cookies

A rich, warm dessert that pairs brown butter with juicy sweet blueberries.

Ingredients

  • Graham Cracker Cookies:
  • 3/4 cup butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups finely crushed graham crackers (about 13 graham crackers)
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda

  • Cheesecake Frosting:
  • 8 oz. cream cheese, softened
  • 1/2 jar or 3.5 oz. of marshmallow creme
  • 1 cup powdered sugar
  • Oregon Blueberry Topping :
  • 2 cups frozen Oregon Blueberries
  • 1/4 cup fresh lemon juice (approximately 1 large lemon)
  • 1/3 cup granulated sugar
  • 1 T. cornstarch

Directions

  • Make the Cookies:
  • Preheat oven to 350°.
  • In a food processor, blend graham crackers until finely crushed.  Measure out 1 ½ cups for the dough and set the remainder aside for topping.
  • With a mixer, cream together the butter, granulated sugar and brown sugar, about 2-3 minutes. Then beat in eggs and vanilla.
  • Add in the dry ingredients (flour, crushed graham crackers, baking soda, baking powder and salt), mix into the dough until completely combined.
  • Chill dough for 30 minutes then scoop dough into 1/4 cup portions. Roll into a ball and arrange 6 onto each cookie sheet. Press down slightly on each ball, flattening until each is 1/2 inch thick then lightly sprinkle remaining graham cracker crumbs on cookies.
  • Bake for 10-11 minutes, until the cookies start to turn golden brown. Do not over bake. Allow the cookies to cool.

  • Make the Cream Cheese Frosting:
  • Beat cream cheese until smooth. Add marshmallow creme and beat until fluffy.
  • Gradually add the powdered sugar, mixing until creamy.
  • Add the frosting to a piping bag or gallon sized zip top bag, then refrigerate for 20-30 minutes for a firmer frosting.

  • Make the Blueberry Topping:
  • Combine frozen blueberries, lemon juice, sugar, and cornstarch in a small saucepan.
  • Cook over medium-high heat for 5-8 minutes, stirring frequently, until mixture glossy and thickened. Cool completely.

  • Assemble:
  • Pipe a generous swirl of chilled cheesecake frosting into each cooled cookie.
  • Spoon 1-2 teaspoons of cooled blueberry topping onto the frosting. Chill assembled cookies 20 minutes to set then enjoy!
