Blueberry Caprese Salad is the perfect simple summer salad that takes only a handful of ingredients and is quick to make. It's red, white, and blue colors shine for a patriotic side to enjoy on the 4th of July, Memorial Day, Labor Day or ANY summer night.
Ingredients
- 2 cups fresh Oregon blueberries
- 4 cups cherry tomatoes
- Fresh basil
- Fresh Mozzarella cheese
- Balsamic vinegar glaze
- Olive oil
- Salt and pepper
Directions
- Wash blueberries, cherry tomatoes, and basil, drain well on a towel or in a colander.
- Cut cherry tomatoes in half and toss in a salad bowl with blueberries, and torn basil. Set aside.
- Slice mozzarella cheese into approximately ¼” slices and then cut into small stars with a cookie cutter.
- Add star mozzarellas to your salad bowl. Top with salt and fresh cracked black pepper and drizzle with olive oil and balsamic glaze. Enjoy!
